A perfect Wimbledon recipe: strawberries and cream smoothie

Tennis season is here and Wimbledon would not be the same without strawberries and cream.
We have used in-season strawberries and creamy almond milk to create a delicious and nutrient-packed smoothie. The frozen banana and cashews help to create a thick and creamy smoothie and the lime and mint pair perfectly well with the strawberries. Strawberries are an excellent source of immune-boosting vitamin C and gut-friendly fibre. Whip up this smoothie and enjoy the tennis.
Makes 1 large smoothie or 2 small ones.
INGREDIENTS
- 200g strawberries, fresh or frozen
- 1 small or half a large banana, peeled and frozen in chunks
- 400ml unsweetened almond milk
- Small handful or 20g cashews
- 1 tsp runny honey
- ½ tsp vanilla extract
OPTIONAL
- A handful of ice cubes
- A squeeze of lime
- 2 mint leaves
INSTRUCTIONS
1. Place the fresh or frozen strawberries in a high-speed blender such as a Nutribullet. Freezing the strawberries helps to create a thick and chilled smoothie but if you don’t have time to freeze them you can just add a handful of ice to the smoothie.
2. Add the frozen banana, almond milk, cashews, honey and vanilla extract to the blender. You can also add a squeeze of fresh lime juice and a couple of mint leaves.
3. Blend on high until smooth, you may need to add a little extra almond milk or water depending on how strong your blender is and how thick the smoothie is.
4. Pour into a glass and enjoy straight away with a paper or glass straw, or store in the fridge for a couple of days.
